I cringed for the longest time when someone would give me some sweet potato to try. I mean, don’t get me wrong. I love potatoes but, to think about having them sweet is a big no-no. It only dawned on me much later on when I was kind of persuaded to try sweet potato (because of it’s health benefits) did I make an attempt to learn a little more about cooking sweet potato. And, that’s when I came across baked sweet potato fries recipe! If they weren’t sweet then this dish would not stand. Together with some ground sea salt and touch of pepper – it’s a great side-dish or a portion of your carbs for the day! I now eat them at least once a week!
Ingredients
Sweet potato - 1 medium
Freshly milled pepper - About 18 twists, or to taste
Freshly milled or crushed Sea salt - 3/4 tsp
Cajun/Cayenne/Paprika spice powder - Generous sprinkle
Olive oil - 2 tbsp
Instructions
1. Pre-heat the oven to 190 degree Celsius. Line the baking tray with aluminium foil.
2. Peel the sweet potato. Cut the potato in medium-thick slice batons (sticks). Line the batons on the tray.
3. Sprinkle the pepper, salt and cajun spice over the batons and mix well using your hands. As the final touch, drizzle the olive oil over the sweet potato batons. Place the tray into the heated oven. (Tip: if you wish to see the char-grilled marks, you can choose to first slightly grill them on a seared pan and then place them in the oven).
4. Bake until the potatoes are tender and golden brown turning them every 15mins. Wait for a couple of minutes before serving.
